Tip for the Grill: Forming the Coals
A lot of discussion surrounds the correct way to form coals in the grill. While we certainly don’t claim to be experts, it really depends on the meat one is grilling. When grilling sausages (brats and hot dogs included) it is most appropriate to form the coals in a pyramid, with the tip of the pyramid rising to the center of the grill. This allows for one to place the sausages, which are best to be cooked using a slow-cook process, on the outside of the grill. The indirect heat will allow for fully flavorful sausage without the burnt and crusty exterior. However, when one is grilling chicken or burgers it is appropriate to have evenly place coals so as to prevent uneven cooking.
Tip for the Grill: Grilling the Perfect Hot Dog
Many grillers avoid cooking hot dogs on the grill, citing uneven cooking and hard, leathery casing that results from such a cooking method. To prevent both of these unfortunate results from occurring, we recommend applying indirect heat when grilling hot dogs. Move the dogs as far away from the coals as possible and make sure to cover the grill (with the holes open, of course). This will, in effect, create a steam chamber in the grill, allowing for evenly cooked hot dogs that are slightly firm on the outside, soft on the inside, and retain the great tastes that only grilling can provide:
