Sweet & Sassy Chicken Panini

Make your next chicken sandwich a little Sassy!

Spread one side of each slice of bread with butter and the other side with your favorite Uncle Phil’s Sweet & Sassy mustard. Set aside. Season chicken breasts with salt and pepper and grill for 3-5 minutes on each side over medium-high heat. Remove from grill and set aside. Place 6 slices of bread, butter side down, onto grill. Top each with one chicken breast, 1-2 slices of tomato, one lettuce leaf and one slice of provolone cheese. Grill for approximately 2-3 minutes. Top each with remaining slices of bread and Sweet & Sassy mustard, then flip. Grill for another 2-3 minutes, or until toasted and cheese begins to melt.

Chipotle Mustard Rub

Spice rub with a little kick!

Mix all ingredients in small bowl. Rub onto chicken or ribs and grill.

Butter Burgers (aka The Unhealthiest Burger Ever!!!)

Forget about dieting. Add some extra fat to your burgers at your next tailgate.

By hand, mix ground beef, Worcestershire Sauce, seasoned salt, black pepper and egg yolks. Form burgers in ¾” thick patties (approx. ¼ lb. each). While forming burgers use your index and middle finger to create a “pocket” in the patty. Place one pat of butter into the burger and re-form burger (you have now effectively created the unhealthiest burger ever). Repeat the process to make 4 burgers.

Grill as desired. Add onion, lettuce, and tomato if you are feeling conscious about the extreme fat intake, or add your favorite to cheese to enhance your loyalty to an unhealthy lifestyle.

Inside-out Double Cheddar Cheeseburgers (aka The Cheesehead)

Can’t get enough cheese? Try this creative recipe for cheeseburgers.

By hand, mix ground beef, Worcestershire Sauce, seasoned salt, black pepper and egg yolks. Form burgers in ¾” thick patties (approx. ¼ lb. each). While forming burgers use your index and middle finger to create a “pocket” in the patty. Place a stick of cheese into the burger and re-form burger (for most, this would be enough cheese). Repeat the process to make 4 burgers.

Grill as desired, making sure add cheese during the final seconds of grilling in order to melt cheese onto the burger (you have now successfully create The Cheesehead). Top with onion, lettuce, and tomato as desired.

Beer Can Chicken

When simply drinking beer won’t suffice, add it to your chicken.

Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and Chicken Spice Rub. Set aside.

Open beer can and drink or pour half of the can out so that half of the can remains. Place beer can on a solid surface. Grabbing a chicken leg in each hand, place the bird cavity firmly over the beer can so that it fits snuggly. Transfer the bird and can to the grill and place in the center of the grate, balancing the bird on its 2 legs and the can.

Cook the chicken over medium-high, indirect heat with the grill cover on for approximately 1.5-2 hours or until the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh, or until the thigh juice runs clear. Remove from grill and let rest for 10 minutes before carving.

Bacon-wrapped Chicken

Try this simple recipe for an easy and creative way to grill chicken.

Place chicken tenders onto 4 metal or water-soaked wood skewers (2 on each skewer). Sprinkle each with Seasoned Salt. Wrap each chicken tender with a piece of bacon and secure with toothpicks. Grill on medium-high grill for 10-15 minutes, flipping after 7-8 minutes.

Grilled Beef Kabobs

Meat on a stick!

Make marinade by combining lemon juice, Worcestershire sauce, oil, soy sauce, Dijon Mustard, and garlic. Cut beef into 1" chunks, and place in marinade. Let beef marinate over-night, or approximately 8 hours. Cut green pepper and onion into chunks, making at least 8 pieces of each. Remove beef cubes, making sure to retain the marinade. On 4 medium or long skewers, alternate pieces of meat and vegetables. Grill to desired doneness, or approximately 10-15 minutes, making sure to rotate and turn skewers every few minutes.

Beer BBQ

Make ribs with a special ingredient…beer!

Make marinade by mixing beer, sugar, onion, cooking oil, chili powder, and garlic. Add pork ribs to bowl, cover, and let marinade overnight, or approximately 8 hours. Remove pork from marinade. Grill pork ribs over medium-hot coals with cover on grill, rotating and basting occasionally. Make sure to cook ribs to an internal temperature of approximately 155 F or greater.

Appropriate condiment: None, these are fantastic as-is (however, you won’t be an outcast if you apply some BBQ sauce)

Garlic Chicken

A garlic lover’s dream.

Bring water to a rolling boil and place garlic heads into boiling water. Boil garlic heads for approximately 2-3 minutes, or until soft. Drain water. Peel the garlic and cut each clove into thin slices. In a separate bowl, mix parsley, salt, and pepper together. Add garlic slices to the spice mixture to coat each side. Slice chicken breasts horizontally. Place garlic slices into sliced chicken breasts. Over hot coals, grill chicken breasts until fully cooked (approximately 5-7 minutes each side, or until 160 F internally). Add remaining spice mixture while grilling.

Buffalo Wings

The tailgate staple.

In a sealable plastic container (a freezer bag would also work just fine) add all ingredients. Make sure to securely seal the container. Mix container vigorously to ensure complete sauce coverage of the wings. Grill over medium-hot coals until fully cooked, making sure to rotate and flip wings every 1-2 minutes.

Grilled Honey Mustard Chicken Wings

For those who can’t handle the heat, try a new way to prepare chicken wings.

Heat small saucepan and melt butter. In a small bowl, make sauce by mixing Honey Mustard, melted butter, lemon juice, and garlic together. In a sealable plastic container (sealable freezer bag would also work) add the sauce and chicken drumsticks. Make sure to securely seal the container and mix vigorously so as to completely cover the chicken drumsticks with the sauce. Over a medium-hot grill, cook chicken drumsticks for approximately 20-25 minutes or until done (160 F internally), making sure to rotate and turn every 3-5 minutes.

Ginger Shrimp

Add a little ethnicity to your next cookout.

In a sealable plastic container (or sealable freezer bag), add all ingredients. Make sure to securely seal the container and mix vigorously so as to completely cover the shrimp. Place shrimp on skewers (this step isn’t necessary, but helps with grilling). Grill shrimp over medium-hot grill for approximately 3-5 minutes each side or until completely cooked.
