Garlic Chicken

A garlic lover’s dream.

  • 2 boneless chicken breasts
  • 2 heads of garlic
  • Water
  • 1/4 cup chopped parsley
  • Salt and pepper as desired
  • 2 tablespoon butter

Bring water to a rolling boil and place garlic heads into boiling water. Boil garlic heads for approximately 2-3 minutes, or until soft. Drain water. Peel the garlic and cut each clove into thin slices. In a separate bowl, mix parsley, salt, and pepper together. Add garlic slices to the spice mixture to coat each side. Slice chicken breasts horizontally. Place garlic slices into sliced chicken breasts. Over hot coals, grill chicken breasts until fully cooked (approximately 5-7 minutes each side, or until 160 F internally). Add remaining spice mixture while grilling.
